Pumpkin Spice Cookies

    1/2 cup shortening
    1 cup sugar
    2 eggs, beaten
    1 cup pumpkin
    2 cups flour
    2 teaspoons baking powder
    1 teaspoon salt
    2 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground ginger

    Optional additional ingredients
    1 cup raisins
    1 cup chopped nuts (pecans or walnuts)

    Mix it all together, drop spoonfulls on baking sheet
    and bake at 350 degrees for about 15 minutes.

    Your degrees, they're F, right? That's approximately 176 C. Shortening, what do you use? Butter, margarine or oil, or doesn't it matter?

    Oops, sorry, yes that is 350degrees F
    Do you have something like Crisco shortening?

    It's vegie oil in solid form. You could probably use butter or margarine but I wouldn't use the liquid oil, that might change the outcome.

    I was looking all over for a recipe for pumpkin bars this afternoon and not finding what I wanted. I of course have packed all the cookbooks so was looking on the internet. All of them used way too much sugar. So, I adapted your recipe, Toni. Hope you don't mind. I just used oil instead of shortening and used two cups of pumpkin and mixed it all up and baked it on a large cookie sheet with 3/4 inch sides. I baked it at 350 degs. and it came out just right. Now, I have to put a glaze on it and it will do for taking to work tomorrow. I made a pumpkin pie while I was at it. I do like fall. dooley

    Are they soft or crispy cookies? My grandmother used to make something with similar ingredients, and they were crisp and spicy. I miss her cooking!

    Oh yummy!Droopy, I couldn't find Crisco here- it's pretty much hit or miss in the grocery stores and I substituted butter. I love them. I am making a bigger batch to send in to the guys on base. Thanks Toni! You rock! Do you have any other favorite cookie recipes? I am always looking for new ones to cook for "my" homesick guys.

    Kasey, they are plump and soft and really good.

    TBL, I do have two other really easy and sinfully addictive cookies that I will post. I just checked the rest of this forum and realized I have not posted them already, really surprised at that.

    I use lard at times in place of crisco. Makes great pastry crusts. If you can find that I would try that over margarine.
