What evil lurks in the hearts of........Apple seeds? With apologies to the "Shadow," the small pips that occasionally cross our palate do contain amygdalin a compound of sugar and cyanide and do cause a bitter taste if crushed. As for the cyanide, the minuscule amount in apple seeds is well within the tolerance of the human body. The tough coating around the seed called the testa is enough protection for the seed to pass through the digestive system, indeed, it is one of the ways the tree spreads its progeny. As humans and animals disperse the seeds far and wide.

Apple seeds contain Cyanide CN-(-C ≡ N) but it is only present in tiny amounts. It is also odourless but they taste bitter to deter animals and insects from eating them.

Apple seeds contain a small quantity of cyanide which renders the seeds quite bitter tasting.
