Raspberry Fire Jam

    Raspberry Fire Jam
    3 Pints

    3 C. raspberries, fresh or frozen
    1 1/2 c. chopped green pepper
    3/4 c. hot peppers, chopped
    9 c. white sugar
    2 1/4 c cider vinegar
    1 6oz pkg. certo pectin

    Sterilize jars and lids.( I keep my jars in the oven just below 200f until needed) simmer lids until needed.

    In 8qt pan, combine raspberries, peppers, sugar and vinegar. Bring to a boil, stirring constantly. Boil for 1 min. remove from heat and set aside for 5 minutes more. Add pectin and stir for 1 min. Strain some of the peppers and seeds out if desired (I don't). Ladle into jars and seal.

    This is delicious. It has an after feel of "oh lala" in the mouth. does this make sense? I don't know how to explain it. But I love the stuff. And so does everybody who tries it.

    Ooh, this jam is addicting. Had it the other day with lamb, and it was wonderful. I did do one extra step, and put it in the blender before adding the pectin, as I did not cut up the peppers fine enough, and thought it was too lumpy. About the right amount of spice for me, my husband wants to double the jalapenos next time.
