Roasting Veggies

    I have baby turnips, potatoes, carrots from the Farmers Market!! Is roasting them the best way and if it is...need a few recipes.

    I had them all cooked before I finished the sentence. The title sounded delicious. :)

    Hummer, for roasting vegtables, I like to clean them and peel if needed then make sure they are dry; roll them in extra-virgin olive oil; and put them in a pre-heated cast iron skillet with just a touch of sea salt and some freshly ground pepper. When the vegetables start to brown, I toss them in the skillet and then test for "firm but cooked" by stabbing with a paring knife.
    The trick is to not over-cook the vegetables. There should be a bit of "crunch" left in them.

    I usually do them the same as MG but in the oven since I haven't had a cast iron skillet until recently. Now we can have them in the summer without heating up the kitchen with the oven.

    I have also added sliced summer squash and eggplant at times.

    Thanks Marlin..but my oven went out last night so will a toaster oven or good non-stick pan do? Have you ever had roasted turnips? I've only had them with greens not how i'm thinking of doing it...
    Will let you know how it goes...

    Hummer, turnips, sliced about 1/4" thick, are fantastic roasted in a skillet. Just add a bit of extra virgin olive oil to the slices (I toss them in a plastic bag with a tablespoon of oil) and then put them in a hot skillet. I hate to admit I don't have a non-stick skillet, but a non-stick ought to act about the same as a seasoned cast iron skillet.
    Try sprinkling the slices with a bit of sugar just before flipping them. Delicious!

    My Mom roasts parsnips from time to time and they taste great!

    I roasted the veggies last night....my family loved them because they tasted great and it was something totally different for us..will be doing that again. Oh i left the turnips whole and some ended up burned/rubbery cuz i left the room for a minute.
