Sandwiches, Norwegian Style

    Today was Kolbjørns birthday, so I set to work in the kitchen. I was all prepared to make him his favorite dish for dinner tonight, but he insisted he wanted sandwiches. Okay. Works for me. So I went to see what we had so I could make some special sandwiches for his birthday. So come on over, your invited to sample some of the birthday boys dinner.

    Here is what I came up with for Kolbjørns dinner. Sandwiches, Potet Salad and Kake.

    The first sandwich is avacado slices with a healthy spoon of sour cream, fresh boiled shrimps (that i had froze, so not so fresh anymore) a cucumber slice with dill and chives from my garden.

    The next sandwich is Crab Salad, with tomato (greenhouse from Lofoten) and a sprig of parsley from garden.

    The last sandwich is Caraway Cheese that i had made, topped with a slice of hard cooked egg, sour cream with chives and a sprig of dill.

    Potato Salad with flowers (kind of) since ours are all gone now, i had to make some food ones.

    Mørslefse and Lefse spread with a cinnamon filling in both lefses. I didn't make these today, i just took them out of the freezer. The Mørslefse is the darker of the 2.

    And when that was all over we finally dug into the cake. Kolbjørn said he wanted something different after 46 yrs of eating cream cakes. So i made him a Boston Creme, with a Norwegian twist. It has 3 layers of cake, vanilla pudding, and a Ganache type of Chocolate/coffee icing. Made almost like a creme cake. Minus the whipped cream and fruit. This is what was left after Kolbjørn, Balder and myself attacked it.

    Oh, I could feast happily on his birthday dinner too. I love Boston Cream cake.

    Oh Bitta what a fabulous spread. Wish I lived nearer to you and it was MY birthday!! I hope KB had a wonderful day but tell him I envy him his birthday feast. ;)

    Forgot to say that Randy wants to know where the meat for those sandwiches is, a strong Viking needs meat. :rolleyes:

    And the floral bouquet on the potato salad is great.
    What kind of bread did you use for the sandwiches, I love breads and as soon as I finally get a new stove I want to get back to baking.

    Also, what is Mørslefse and Lefse? They look like something you have shown us before but I have slept since then and sometimes at my age when I sleep my memory wipes itself clean ;)

    Wow, Biita, what a delicious feast. I would gladly let you cook me a birthday dinner like that anytime. You are very creative when it comes to food. Love your "flowers" on the potet salad.

    Sandwiches look delicious. you've put on quit a spread. Hope he had a very happy Birthday. Boston cake looks just as good also.

    The food looks de-lish. And you always arrange it so beautifully. The KB happy birthday. I'll bet your daughter misses your cooking!

    Thanks all, we did have a good time. Stuffed ourselves silly, even the dog!

    Toni, tell Randy, that a real viking eats mostly fish for a diet, about 80%, the rest is mountain sheep, goat and boar. lol. Shoot they lived mostly near or on the water,,,lol. They used to carry around with them, dried fish flakes, and when they got hungry they would pull some out and eat it like that. They still eat that here today. But we mostly sell that to the tourist,,,lol.

    Since i have tried that recipe, its the only one i use now. Its so easy to make, and takes little effort. Theres the video, but the recipe follows down a little lower.

    Lefse is kind of like a huge tortilla, i don't know how else to explain it. Theres a few different kinds like this. plain, potato ect. And cooked in a huge lefse skillet or on a huge piece of flat iron over an open fire. Mine is done on a lefse skillet. Griddle!! Thats the word. Mørslefse is more kake like, but made into huge rounds also, but baked in the oven. Both are spread with butter, cinnamon and sugar. the Lefse is folded and the Mørslefse is 2 put together, then cut into strips, then wedges.

    Sjoerd, i think if you was here, there would of been alot of growling going on,,,lol. Then i would have had to tell KB to behave himself....lol. Ofcourse you and the Mrs, are always invited, i just would of been in my glory making more is all.

    All of you would of been welcome,,i would of cooked for a week and been one happy Cook.

    When i got up this morning, KB was up drinking coffee and with a huge slice of cake, grinning ear to ear. Geez that man loves to eat! But he will go work it off in a few hours.

    Belated happy birthday Kolbjørn! Such a lovely birthday spread, Biita, it looks delicious! I'd love to have a taste of everything. Your potato salad looks nearly too pretty to eat. :D I need to find some breakfast, I'm probably growling worse than Balder right now.

    Thanks Droopy! We did have a good day, more relaxing than anything.

    Balder had planted himself infront of the fridge, everytime one of us walks into the kitchen he gets excited, tail starts thumping. Poor dog, all we was going for is coffee.
