I've got some potato plants coming up where I didn't plant them. They must be ones I missed from last year. Is it okay to let them grow and harvest them, assuming they produce anything?

I don't see why not, if you don't need that space for something else. You may not get the biggest potatoes, but they ought to taste just fine.
We often get tomato plants, herbs, and some flowers where we didn't intentionally plant them. Gardens express gratitude in the nicest ways!

We often get a better crop from these 'volunteers' than we do from the properly planted ones.

Pianolady, we have several volunteer potato plants. I doubt they will produce abundantly, but every potato counts. I'm letting them grow until they're ready to be harvested.

I've had good crops from potatoes I've missed when digging them up. They seem to produce more potatoes that the ones origionally planted.

Go for it. I like to dig all those volunteer potatoes when they're "new potato" size, boil them up in a bunch of green beans with the first white onions and a little crumbled bacon, YUM!
ETA: They could be from seeds, too. Sometimes potatoes do make seeds and you don't notice them. The very first "Burbank" potato was a seedling, now look- they're everywhere!

I have a question which may have been addressed already. When do I stop adding dirt to the potato hills? Most are blossoming. They're 0ver 2 feet tall.
