Does anyone have a cheesecake recipe to fit a small pan (8x8) or so? I have many for a spring form pan and a few for a 9x13 pan. I'm afraid to adjust the measurements for fear of making an ooey, gooey, runny mess in the bottom of the oven Deanna :-D
Although I've never used that size of a pan, I have made "mini" cheesecakes using those 'Nilla wafers as the bottom crust and baking them in cupcake pans. Use the paper cupcake holders. I don't have the recipe in front of me, I believe it was 350 degrees at about 15-20 min. The little cups make it easy to top off with a fruit pie filling or fresh fruit if you please.
Here's a recipe I use Deanna that you don't even have to bake. :-D Ingredients. It fits nicely into an 8x8 sponge cake tin. 150gms(6 oz) digestive biscuits, finely crushed. 3 tablespoons butter, melted 3 1/2 tablespoons caster sugar 1 (200g) tub cream cheese 5 tablespoons caster sugar 2 tablespoons lemon juice. 120ml (4 fl oz) cream, whipped sliced fresh strawberries (optional) Preparation. In a bowl, mix together digestive biscuit crumbs, melted butter and 3 1/2 tablespoons sugar. Press biscuit mixture into an 18cm loose bottomed cake tin and place in refrigerator until ready for use. In another bowl, beat cream cheese, remaining sugar and lemon juice. Fold whipped cream into cream cheese mixture and spread over the biscuit base. Freeze cheesecake for 1 hour, covered with aluminium foil. Place in refrigerator for 30 minutes before serving. If desired, top with sliced strawberries when serving.
Deanna did you try 'googling' for it? I did and there are tons of recipes there. That is making me hungry for my daughters pumpkin cheesecake. After all it is that great time of the year again, when my thoughts go to baking.
