Snowball Cookies

    These are also known as Pecan Sandies but are softer and sometimes Mexican Wedding Cookies??

    1 pound butter
    1/2 cup sugar
    4 teaspooons vanilla extract
    3 1/2 cups flour
    1/2 cups chopped pecans
    Confectioners sugar

    Cream butter and sugar together, add vanilla. Stir in flour and mix well. Stir in nuts.

    With your hands roll into balls about 1 inch in diameter. Place on baking sheet about an inch apart and bake in 350 degree F oven for 10 minutes. You want them completely cooked but they should not be brown on the bottom so you have to really keep an eye on them at that 10 minute mark.

    Place on cooling rack until cool. Then roll them in confectioners sugar.

    I've taken a copy of your recipe Toni and will try it out at Christmas time. It certainly sounds delicious. :-D
