Strawberry Rhubarb Pie Recipe

    I made up this recipe last night by combining 2 recipes into 1 and making some modifications. It came out very nice.


    1 crust of your choice

    Filling

    3 cups of chopped rhubarb
    1, 16 ounce bag of whole frozen berries
    3 1/2 tablespoons quick cook tapioca
    1 tsp nutmeg
    1 cup white sugar

    Topping

    1/2 cup quick cook oats
    1 stick of cold butter cubed
    3/4 cup of flour
    1/2 cup flour

    Slice the strawberries while they are still frozen. Do not allow the berries to thaw too much. Mix all ingredients into a bowl and let stand 10 minutes. Berries should still be firm but not hard.

    While the filling is sitting, place your crust in the pan.

    Place all ingredients for the topping in a bowl. With your hands crust ingredients until everything is combined and sticking together.

    Preheat over to 400.

    After 10 minutes put the filling into crust. Top with the crumb topping. Place pie pan on a sheet pan to prevent mess.

    Bake for 10 minutes at 400, reduce heat to 350 and bake another 35 minutes.

    Let Cool.

    I must try your recipe to see how it compares to mine. It certainly looked yummy from the photograph you posted in your blog. :stew1:
