Strawberry Rhubarb pie

    Does anyone have a really good recipe for strawberry rhubarb pie? I love it but have not found a good one. I love a shortbread crust and have a good recipe for that but the pie filling I need help with.

    Well i don't know if you would concider it good, but i also use a shortbread crust when i make this pie. The secret i found to making a good strawberry/rhubarb pie is the rhubarb stalks have to be the red kind and very immature. the new spring thin ones. Your fillings should be equal...for instance, 1 cup of each..or what ever the amount reads.

    What i add spice wise is just a very small pinch of anise, powdered, grated lemon rind, absolutly no pith or white part to it. that is about a tsp. and just a tsp of the lemon juice. this helps to enhance the flavors of the strawberries and the rhubarb. thats it. ohhh yeah the jel i make myself, just like i would to make jam. I also jar the jell with the filling so i can make pies in the middle of the artic winters and pretend its spring,,lol.

    Here's a quick and easy pie you could try GardenMama.

    STRAWBERRY RHUBARB PIE

    2 (9 in.) pie crusts
    1 cup sugar
    1/3 cup tapioca
    1/2 tsp. grated orange peel (optional)
    3 cup rhubarb, 1/2" in length
    3 cups of strawberries, if small you can leave whole
    2 tbsp. butter

    Stir sugar, tapioca, mix with rhubarb and strawberries, let stand 15-20 minutes. Pour in pie shell. Top with butter and cover. Brush beaten egg. Cut slits, bake until crust is brown at 425 degrees for 40-50 minutes.

    Thank you I will give it a try...I will let you know how it turns out...BTW do you peel the rhubarb or leave on the stringy outer layer?

    I just give it a good wash and then chop it into pieces as it breaks down when it's cooked. Hope your pie turns out OK. :-D
