Tomato Pie

    This is a hit where ever I take it. With all the fresh toms coming in and reading and see the bumper crop at sjoerd's green house thought I'd share it with you. The owner of the flower shop had been given a bunch of toms by a friend and his sis forwarded this receipe to him. He made a pie. then made more brought it in the shop to share. I could have eaten the whole thing..yum.. and enjoy

    Sure hope you all like the pie. always forget to take pics, never any left over.



    4-6 tomatoes slice and drain ( sprinkled w/salt and put in colander prior to starting anything else, removed and place on paper towels blotted all moisture off)

    9 inch deep pie crust baked lightly ( 11 min)

    8 slices bacon fried crisp and crumbled

    3/4 cup mayo I used Kraft

    3/4 cup grated Parmesan

    basil fresh is best (tried dry is was OK)

    crumbled Ritz or panko, topping

    salt and pepper

    layer tomatoes bacon and basil, salt and pepper as you go (I did not salt because of first step and it was fine)

    mix mayo and cheese, spread on top (if your pie crust is very brown spread over crust edges.) bread crumbs or crackers sprinkled on top

    bake at 350 for about 30 min.

    I have got to try this one. I have tomatoes coming out my ears and plenty of fresh basil.

    It is really good. My 14 month old neice was smaking her lips for more.
