Put parsley or cilantro stems in a glass of water, put in the fridge, and these herbs can last fresh for over a week.
Basil sprigs, as Toni reminded me, can last for months in a water glass, at room temperature, will get roots.
Mint and rosemary sprigs last for a week or more in a glass of water. Mint can get roots, but does not stay lush for more than a week.

Thanks I'll try that. Right now I just freeze them in a plastic bag.
