Vegetable Medley in 5 VERY easy steps.

    You will need:

    1 1/2 cups of snap green beans
    2 whole yellow squash
    3 cups of sliced mushrooms (or whole small pack)
    1 cup dried of green peas
    2 ½ cups of rice
    2 whole tomatoes
    2 sticks of celery
    2 teaspoons of pepper
    2lbs of hamburger
    4 14oz cans of vegetable broth
    2 green onions
    2 potatoes
    1 cup of water
    1 cup brussel sprouts (about 6)

    Before you start cooking anything, go ahead and peel your potatoes. Slice and dice your potatoes, celery, green onions, squash, and green beans and go ahead and throw all those including the brussel sprouts (do not slice) into a big bowl and set to the side. I did this because you will want these to cook a little longer before you add the other ingredients.

    Ok here we go...

    Step 1.
    Begin by breaking up the 2lbs of hamburger well or to however you want the clumps of hamburger to be. Add 1 tablespoon of pepper and cook on stove top on medium until brown.

    Step 2.
    Once the hamburger is brown and there isn't any more red, do not drain grease and add all the vegetable broth as well as that bowl of vegetables you cut. Also this is where you add the rice and the peas. Turn the heat up to about a third of the way between medium and boiling and add the other teaspoon of pepper. Set timer to 20-25 minutes. Stir...

    Step 3.
    While everything is cooking, go ahead and slice and dice the tomatoes and mushrooms and toss those into the pot. You can take your time, but don't wait too long. Stir...

    Step 4.
    Add that cup of water if needed.

    Step 5.
    Remove from burner, let cool, and eat and enjoy.

    I suggest a nice glass of sugar free cranberry juice with it.

    That sounds pretty tasty, Jon,esp the brussels sprouts. I like your recipe style too. You may have a new career in store as a cookbook writer.

    Thanks Mary Ann! :D I actually just came up with that today while I was at the store. I just kinda decided to do a vegetable something so I bought a little of everything :D . That's how I come up with most of my recipes too.

    Jon I'm going to cook this for my youngest son when I see him at the week-end. I'll be leaving out the meat though as he's a vegan but the rest is sure to go down well with him. :stew2:

    That sounds so good. I can not wait to try to make it. I am alway looking for new ways to eat vegetables.

    I missed this when you first posted it, I love to have different types of soups/stews makes life much easier to throw things in a pot and let them cook.

    I will have to leave out the tomatoes and onions, 2/3rds of my family will not eat those. :rolleyes: But the rest sounds good.

    This sounds really good, altho the ground meat will not be used here either. I will try it with fish instead or mussels. Hmm, maybe shrimps. Or ground pork. Thank you for a new idea for dinner. This is great!

    You can reduce the amount of rice you use as it can be a bit much. Its also good if you throw a cup of corn in it too.
