Pasta Primavera! It uses up all those little odds and ends from the garden, the sauce is great with lots of garlic, and it's not too heavy for a late spring or summer meal. Grilled eggplant--sliced 1/3" thick, bathed with olive oil and a little freshly ground pepper, and put on the grill. Cherry tomatoes, eaten on the way back to the house!
i agree win marlin, cherry tomatoes to and from the house after that it chutney, great way to use up all the green toms. roasted cherry tomatoes and garlic with spaghetti.

Cheif of my garden is a supreme tomato sandwich. requires homemade bread and a big enough beefsteak tomato slice to cover from crust to crust, with mayo, not salad dressing. Homemade V-8 is pretty good too.
We eat them fresh out of the garden...I don't cook a lot in the summer because I'm usually getting ready for a farmers market. Anything leftover from the garden or market I try to can or freeze for the winter. My cupboards and pantry and freezer are looking like Mother Hubards cupboard. I'm so looking forward to fresh veggies. If spring ever decides to actually get here and it quits raining.
