You can plant garlic, shallot bulbs, flower bulbs for Spring. A lot of things can be grown by "winter sowing" but I don't have a lot of experience with that. Weeds grow too fast here in the winter. Some people plant peas or snowpeas by winter sowing. Depends on your interests and location. Also Fava beans, some mustards, some green manure crops.
There have been several books about sowing winter seeds. Usually cleoms have overwintered in very mild winters many others . Generally the seed all rot or birds ground critters seem to get most of the seeds …except the weed seeds.. no one likes weed seeds not even vermin..
