What to do with pimentos?

    Hello everyone Do you all know what I can do with pimentos fresh from the garden, I really don't want to can them so is there any other way I can keep them for a while, How do they fix them when you buy them out of the store in jars? :-? I'm confused!!! Thank you for your help Margie

    I just googled fresh pimento recipes, and came up with wonderful ideas from stuffed peppers to fresh pimento cheese. Use them anywhere you would use a fresh red or green pepper. Salads. Stir fry. Eat fresh off the vine. Have fun and experiment. Maybe replace the tomato in a caprese appetizer, with pepper, then fresh soft mozarella, then a basil leaf.

    Also I have dried peppers when I have an excess. Can cut them and scrape the seeds out, or leave them whole. After they are dried, can freeze them for longer storage or pack them in oil similar to tomatos for storage of a month or so in the fridge.

    dr says "Stuff them in olives. Put the olives into a martini (stirred not shaken). Drink the martini.Take the olives outside. Throw them at the birds, go back inside and go to bed. Good night.

    It aught to be possible to parch them and skin them and freeze them.

    Parching (or dry roasting if you preffer) will cause skin to blister and it can then be easiily skinned.

    LOL, Best recipe I have heard yet ! Pimiento`s are a pepper like any other. And thats how I use them. But an easy thing is to blister them and throw into a plastic bag till skin loosens, peel, seed and pack in a jar and cover with olive oil. Store in fridge. Use like any roasted pepper.

    I love love love pimento cheese! :drool: Occasionally I'll make myself a batch because not many people this far west even know what it is :-? They don't know what they're missin'
