What to do with ugly tomatoes!

    Make SALSA!, Our weather had been very dry. Dust bowl type dry. Parching heat and high humidity.
    Then four days of rain. The skin of every tomato on the vine ruptured, split wide open. Not wanting to waste them I made salsa. I used a mix by ball canning, and it was very good and super easy.

    How about posting the recipe in the Recipes and Cooking forum. My oldest daughter is always looking for different versions of salsa.

    My tomatoes don't get a chance for me to decide whether they're ugly or not 'cause I eat them as soon as they're ripe - no matter what they look like. :D

    Ugly tomatoes? What's that?

    -cut them up for a salad
    -make Pico de Gallo (fresh not cooked salsa)
    -make Gazpacho (Cold Mexican soup)
    -peel them, dice them and freeze them for sauces and soup later on.
    -can them
    -make sauce and can it.
    -make salsa and can it. (Got to have my 12 jars for the year).
    -make tomato juice and can or freeze it.
    -slice them up and dehydrate them. Great snack.
    Or blend them up for tomato powder/seasonings.

    I put the recipe I use to can salsa in the cooking and recipe forum.
