Randy's Mom makes this almost every year and we all fight over it. 32 crushed Graham Crackers 7 ounces shredded coconut 2 cups chopped pecans 6 ounce jar cherries (either red or green) NOT pie filling 1 box chopped dates 1 can Eagle Brand Milk (NOT regular condensed milk) Mix, put into small loaf pans. Bake at 350degrees for 35-40 minutes. My MIL didn't include quantities on the recipe so you have to play it by ear. These two links will help our members out of the U.S. figure out what Graham Crackers and Eagle Brand Milk are http://en.wikipedia.org/wiki/Graham_cracker http://www.eaglebrand.com/?gclid=CIGm2s ... tgodDDH8mA
That does sound very tasty. I miss my mom's fruit cake. It wasn't like the one's everyone hates. It had more cake than fruit and we all looked forward to some in our Christmas box of goodies. I have the recipe... maybe I'll try it next year. Or... maybe I'll try your's instead! :-D
Okay Toni, that definitely sounds like a fruitcake that can be eaten, not tossed! Cheryl, post your mom's recipe, please, so we can look forward to it, too. Who knows, I may make fruitcakes next year!
That sounds good, I may just have to make some (I have never eaten nor baked fruitcake in my life xD)
