Tropical Kumquat Cake Recipe

    Here's the recipe as requested:

    INGREDIENTS:

    3 eggs
    2 cups sugar
    1 cup oil
    1 tsp. cinnamon
    1-1/2 cups chopped Kumquats
    1 cup chopped nuts
    1 20 oz can crushed pineapple (well drained)
    3 cups flour
    2 tsp baking soda
    1 tsp salt

    For Glaze: 1 cup of powdered sugar, 1 tsp Vanilla and 3 tablespoons of milk


    DIRECTIONS:
    1. In a bowl, beat eggs, sugar and oil. Fold in dry ingredients and mix well.
    2. Add chopped Kumquats, nuts and pineapple.
    3. Pour into greased and floured tube pan.
    4. Bake 1 hr and 15 minutes in a 350 degree oven.
    5. Cool, remove from pan.
    6. Drizzle/pour glaze as desired.
