Ok you fixers out there, give me the off broadway ideas for this batch of tomato sauce. I had to take tomato scalps on the box grater because blanching is a lot of work. This pot of tomatoes needs you! Also tonights dinner was called off due to BLT sandwich storms early this afternoon. As a consolation stuffed panko jalapenos from the garden served on a lowly porcelian plate are tonights light fare. I picked some basil for the tomato sauce because somehow, at some point, spaghetti is in my near future. Sorry I did not leave you more peppers. I blame it on my cream cheese addiction.
I have not heard of panko jalapenos before. What are they? ... although I admit that I incredibly rarely eat anything with "hot" stuff so consider me a newbie in the jalapeno world. How are those pankos??? What are the peppers stuffed with? Some kind of granular looking cheese I think? And then you baked them? I had a nice seafood lasagna over the weekend so I am still trying to stay away of most pasta dishes. The weigh scale will determine for how long to stay away of the spaghetti and pasta dishes. Not hot at all. I grow sweet peppers mainly. They are stuffed with cream cheese and the panko is a type of breadcrumb in this case the flavored type, but they can be plain. I baked those at 350f until the peppers wilted and the crumbs browned.
Not today, but I went shopping for a couple of items for future meals. In the Iceland store, I bought three packs of their "Harry Ramsden's breaded haddock fillets" at £5 a pack and a bag of their £3, "seriously crispy chips." Then into Tesco for their 145g. "Kingfisher lump crab." At £2.80 not really expensive (from Vietnam) and it makes an ideal meal for one with salad. It's hard to find in there as it's buried amongst acres of cans of tuna. I bought six cans.
With that tomato sauce,, picante sauce would be in my future ! It is one of my most used sauces ! I put it in everything !
Tonight is pork medallions with ratatouille as a side, individual loaves of cottage bread, and deviled eggs. My husband loves deviled eggs, so we are having those instead of a green salad. He's a good man, and I indulge him when I can.
Before that we had Lamb Steaks, Potatoes and Carrots Roasted in a smiggin of Olive Oil with Red Green and Yellow Strips of Peppers also Roasted on a grid so they Crisped and Just Browned on the edges....Made a lamb thick sauce form the lamb juices added cornflower some mint and a secret to make it Complete.. Husbands Birthday so I treated him well..... made him clear up afterwards.....
