Breaded plaice with baked potato, sweet corn, grated raw beetroot and a side salad of tomato and spring onions and a lump of strong cheddar cheese, hubby has 2 wholemeal sliced bread spread with a veg spread called Vitalite.
Chicken and salad wrap ( red cabbage, tomatoes, grated carrots, lettuce, red onions and yellow peppers) with Sweet Chilli Sauce.
Tortilla pizza. This is a "low carb" tortilla. It's actually better than most store bought or delivered pizzas. Also faster to make than it takes to order out. It barely affected my blood sugar, yay!
Daniel— That little jewell looks scrummy, mate. So then, do you buy those in a grocery store or did you make it yourself. Great that eating it did not affect your sugar. What a bonus. Tortillas were something we ate quite a lot of when we were living and travelling through Mexico. Interestingly, a tortilla meat something different in Spain. I was fond of those too. The tortilla de patatas was our stand-by when we felt peckish while knocking-about. The tortilla de patatas was different wherever we would get them. Tonight we will have a cheese schnitzel with runner-beans and spuds. We will make extra spuds so that we can throw a potato salad for tomorrow’s Christmas salmon supper.
@Sjoerd, I have a tortilla press but have not been successful at making good, thin tortillas. It's on my bucket list. These tortillas are some kind of low carb product. I like the real thing better, and promise myself some as a treat when my weight is down a few more pounds. Made into a pizza, they get a lot of flavor from the sauce and toppings. I use sauce from last summer's tomatoes, plus onion and Mozzarella or Oaxaca melting cheese, plus oregano, chili flakes, and other flavorings. The tortilla is fried a little before adding the toppings and baking.
