An exciting cooking moment (at least for me)

    It also works for peaches, nectarines, and the like. Last year, my sis-in-law was elected to make a peach cobbler for a holiday dinner. Although it turned out lovely, she complained that it took her hours and loads of frustration to peel those darn peaches. My sis and I pointed out that blanching would've saved her loads of trouble. She called me shortly after that and thanked me. She found it so much easier that now she makes peach cobblers for lots of different church functions and is loved for it.

    TBL - thanks so much for the recipe. It does sound delicious. I think it would be good with rice, noodles or au gratin. I love chicken in just about any form. Think I will try it very soon. Thanks again! ;)

    You are very welcome, Kuntrygal. I have a super easy Chicken Parmigiana recipe that I can pass on to you. My daughters loved chicken in any form and chicken parm was their favorite. When they were young, we were so busy and I needed to cook good, wholesome dinners that didn't take all day and could feed the bottomless pits that teenage boys seemed to have for stomachs. I finally figured out how to make a quick version that still had a great taste.
