Baked in an oven are the best. I cut up my beets in med. size pieces. Coat them with olive oil and a little sea salt. Put them on a cookie sheet and cover with foil and bake them in the oven at 350 for about 45 min. or until fork tender. YUMMY! I love baked veggies to boiled ones any day.
Tooty2shoes, That sounds good. I have done lots of veggies that way but never thought of doing beets. Now I have go go buy some fresh ones just to try it. Go figure..........
i totally agree with tootyshoes they are great roasted, with some garlic thyme and olive oil mmm. i also do a mix of beets, carrots, squash and onions roasted tastes great.
Roasting the does sound great. I still have 3 rows in the garden and my family turns their noses up at them.
carolyn keiper, Could I have left my beats in the ground that long also? We really have about the same weather.
I suppose it depends on how long they have been in the garden. We planted this batch at the beginning of Sept. They are now about the size of golf ball. Thanksgiving on Thursday will include some roasted ones...

I'm thinking you are welcome. dinner is at 1:00 ish. I have plenty of beets for all to have a heaping helping.and if we are still hungry I have pumpkins to bake and 3 rows of potatoes yet to pull.
Don`t forget the greens !! Carolyn,, do the people in your area not eat green stuff ?? Baby beet greens for salad mix should sell well,, larger for side dish !!
Oh yes Mart. My neighbor let me try some of her special salad and when she told me it was beet greens I couldn't believe it. It was soo good. I tried it on hubby and he wouldn't eat it. He wouldn't even try it and he was raised on a large farm. carolyn keiper, I'll bring the spiced over night cake for dessert. Oh what a meal we could cook up......Yum Oh and in that first picture: just look at how far it is to that back building. That's a big garden. Wow!
I plant an Italian Salad Blend to mix with my lettuce and it has beets in it. I always add more from my beet row !!
Barb, bring on the cake. We will be good with just beets and a cake! It really isn't a very long garden there, Barb, only about 100' at the most. More like prob. 80'. there is a huge area that isn't apparent in the photo that is all the "yard" for the dump trucks and trailers to swing in a big circle coming in the driveway. I don't eat the beet greens. I know, I know! they are healthy, I just am not a greens eater. If it is on a sandwich that is fine, but not too much in a bowl. Steamed and with vinegar, maybe, but the rest of my family wouldn't eat them.
