My wife's parrents use to bring us those things. The first ten years of our marrige we had zuchini almost every day most of the summer. Wendy really likes them, but i was glad when they ran out.
I made some good griddle cakes with zucchini the other day. Grate two cups, add half a cup of chopped or grated onion, half a cup of coarse grated cheddar cheese and half a cup of biscuit mix (bisquick is the brand here). Stir it up and let it set a few minutes and it becomes a batter. Pour a bit of oil onto a griddle. Spoon the batter in the size you would like it and cook on both sides until browned lightly and cooked through. I served them with melted butter or margarine and some parmasan cheese. I didn't plant as many this year as I usually do but we have enough for ourselves and Dan and a neighbor. dooley
I have a recipe for yellow squash that you could use with zucchini too. Take one and grate it. Take milk, eggs and corn flower. Made a batter out of it. Add the grated zucchini and then fry in oil. I like mine nice and crisp. Comes out almost like a pancake.
