Hi 2ofus. Ref your Sedum you are spot on - it is trying to revert back and good idea to remove the offending stem. From my own little experiences I think there is a greater tendency for variegateds to try to revert back to green than the greens to produce variegated stems though it cuts both ways. I have deliberately removed stems to grow on in both cases.
One in particular was the black foliaged grass Ophiopogon planiscapus Nigrescens which is continuously producing green stems amongst the black. I removed some green and grew it on for the sake of having the two types of the same plant. Its worth keeping your eyes on the Hostas also - have had them produce a stem or two of different foliage in a plant - marked them carefully with a piece of tied round wool - later in autumn removed these stems with piece of root - potted them and it stayed true. Best of all was when a couple of all yellow stems appeared in a green & yellow plant and it worked - grew to a lovely clear yellow leaved plant.
Fascinating all together this gardening/plant thing is it not - every time you step out into the plot theres something new to learn. Syd.
