Beautiful pictures EJ, did you take any of the inside of the castle? There is a dinner theater in Dallas called Medieval Times. While you are eating the performers do pretty much what your pictures show, except for the bird part I think. There are about 6 of the knights who live in my area and every Sunday you can find them at a local park in costume practicing sword fights. And there is a Ren Faire every April-May down south of Dallas that has the same thing, including the bird part.
