KK-- Thanks for your nice words, mate. The processing of the Pak Choi: First I wash it and remove soil and slugs if there is any. I blanch them for ~2 minutes, rinse them and cool them off rapidly. Next I cut the leaves into "ribbons" or small rectangles. I then press them lightly to get rid of as much water as possible and then bag them and chuck 'em into the freezer....and Bob's yer uncle.
