Hi. Ref Plantains have never used them for any purpose but I do deliberately grow a red leaved version Plantago major rubrifolia (?) which is bigger than the usual green types. It makes a good show but gets mildew badly later in the season - seeds everywhere also but removed when first seen its no problem. Not sure about this but I think there is also one with a "shaggy" flower/seed stem (will check this for a name). Dandelion for wine making & salads popular here for many years. I do so love to read of plants and their histories including uses foodwise and medicinally over the years - all very interesting and some quite amusing. Edit. Could not find that name but think it was in a book on old cottage plants - may be a sport grown on years ago but now gone. Gerard refers to one with "hoary & hairy" leaves and spikes.
