This is on the menu tonight. I sifted through a lot of recipes to try and find one that would work with what I have access to in my pantry. It is now cooling and resting before it is served for dinner tonight. We will have basmatti rice, and toppers of diced cucumber, diced banana and mango chutney. Yes i had some plant based margarine and some tomato ketchup, a bit of pickled red cabbage, shop bought.
I thought all margarine was plant based Logan We had jackets today too with butter, cheese & veg pie and broccoli.
I'm not sure about outside of my little world, but here the label "plant based" means that there is no dairy, which is an ingrediant in a lot of margarines. This makes it friendly for folks who are Vegan or lactose intolerant I have some on hand durig the summer months when family members who need the plant based margarine come to visit.
That's right, the only thing it has Palm oil in it like most things these days and you know where that comes from.

Rainbow trout caught in the summer Alpine fishing trip, quinoa, garden veggies of grilled zucchini ribbons and brocolli. ( definitely doing the grilled zucchini ribbons again next year). No, I Iike them well baked with a little salt. I do have chives and sour cream on my potatoes. I bake them right in the skin and pop them out. Is that the way he does them?
