Hubby was reminiscing about when we would go to a pub for snacks and play darts years ago. So tonight the Pub will come to him. Air fried and baked though..its too cold out to use the deep fryer. Chicken strips, zucchini sticks, baked yam wedges, and the bacon wrapped asparagus that we didn't have last night. Plus a game of cards a bowl of pretzels and a cold pint.
Red bean chili with rice, I stick a dab of butter under the hot rice, so it melts. I was out of cayenne so used a spoonful of sriracha instead. That worked nicely. Spicy stuff. I use tofu instead of meat. I freeze it, then let it thaw in the fridge for a few days. Then, slice and use paper towels to blot put the water. Then the tofu is like a sponge. I cut into tiny cubes, toss in olive oil, and bake at 375 F for about a half hour, stirring a couple of times. When it's light and slightly crispy, I add it to the chili. The tofu soaks up the juices and becomes quite flavorful. The freez/thaw is what makes the tofu spongy. As for the beans, I like using dry beans. I soak in water about 6 hours, rinse, then boil in water containing some smashed garlic cloves and some onion powder. After about 45 min, I add a spoon of salt, then boil until the beans are tender - about 39 more minutes this time. They are quite flavorful that way. There's enough chili for several more meals. Tonight we are having jambalaya with French bread. It's darned chilly here and we need Cajun food to keep us warm and happy. Husband always puts Tabasco sauce on his, but I forego it since I have a "more delicate palate" which means I like to taste food, not get burned out! I learned to make jambalaya from a cookbook I picked up in a used book store. If I ever get my hands on a dead alligator, I know how to cook it!
It has been a few days of sausage stuffed pork loin here. I made a sausage and pork stroganoff Friday and tonight the loin found its way into stuffed bell peppers.
Rice noodles with cream cheese sauce, chicken breast marinated in tomato garlic, braised with with garlic, onions, peppers. Next time I will add turnips to the mix. Hot pepper flakes . Homemade flat bread & Strawberry sorbet. With strawberry margaritas.
Today is strawberry Day. Had left overs from last nite and strawberry margarita and strawberry shortcake.
