    Logan— that is aspirational. I can’t wait. My strawb plants are just beginning to bloom only.. i am counting the days.

    Tonight will be grilled salmon with a spicy herb topping, roasted potatoes, and a green salad. It's cool today, so I'm hauling out my "cool weather" recipes!

    Its a small fried cornbread fritter with onions ! Have to have the onions in the fritters ! I use green onions, both white and green parts !

    Fritters. Potato fritters. Do you put anything in them other than onions?
    ...and did you say that it was actually cornbread?
    It sounds sorta interesting.

    Just plain cornbread with the onions mixed in, then fried ! You could add some minced jalapeno`s if you like them but hubby likes them not too hot ! Actually they are good with anything you normally eat cornbread with,,,beans, greens ect !
    You could even add a bit of fresh corn with any of the other components or all three !
    Just use your imagination ! Most deep fry them but I use a good heavy skillet and medium heat !

    Came in from work and my Bride had steaks for the grill, squash and onions, roastef potatoes and cinnamon sticks layed out. I used the jaccard tenderizer on the steaks and no oil. That is a cool kitchen tool.

    Today roast turkey, sage and onion stuffing from the freezer portioned up. With all the veg and gravy.
    Pudding is apple and sultana pie with ice cream.

    So we thought to ourselvesyesterday...”What to eat tonight...what have we not had for some time now”? This is what we came up with:
    We were filled with glee when we came up with this one. Actually, it was my Bride who remembered this.

    I took up the sous knife and began with the onions and paprika’s. The Bride started the pasta ( Orecchiette No. 91 ). I was soon in tears, but pressed on.
    “Dump ‘em”, she said.
    The artistically chopped veg hit the pan with a siss !
    I backed away and began washing the prep platters, and tools...as chef Bride put on her game mask and began to sniff stir, sniff, taste, stir....

    After a few whisks, the Bride stood before the stove with arms out from hersides, like a fencing participant and she warbled, “Time for a bit of Suzie Salt”. She let the salt drizzle from her fingers.

    A few more stirs, and she snatched-up the pepper grinder...looking over her shoulder to me and said with a wink, “...And who goes on top of Suzie Salt”?

    We chimed in together— “ Percy Pepper” !

    We roared with laughter and high-fived. She went back to her cooking and I finished the drying and put away the clean implements and cutting board.

    Our meal was well on its way.

    For pud it would be scoop ice cream— vanilla cream with blueberries and cheesecake crumbles all stirred through with a dollop of whipped cream on top.
    It was like a last supper for me, for the next day I would be off for the second covid prik.
